Modern oil extraction is designed for speed. Industrial mills heat seeds to over 200°C, then strip the oil through chemical solvents — a process that destroys delicate antioxidants and gives most supermarket oils that flat, almost rancid taste.
Cold pressing is the opposite. Seeds are crushed slowly in a wooden ghani at temperatures below 45°C. The oil seeps out drop by drop, carrying with it the vitamins, minerals and aromatic compounds that make each oil unique.
You can taste the difference. Cold pressed coconut oil smells like fresh coconut. Cold pressed sesame is warm and nutty. Cold pressed almond is sweet and buttery. None of these oils need to hide behind deodorisation — because nothing has been damaged.
